DETERMINATION OF BIOCHEMICAL CONTENT IN MICRO SPROUTS OF DIFFERENT SPECIES

Abstract
Different plant species of the seeds in different sizes (2, 4 and 6 cm) was did purpose content of micro sprouts changes in biochemical, in the research. Seeds of beans, mung beans, soybeans, peas, quinoa and buckwheat were used in study. Relative moisture content, protein ratio, ascorbic acid (vitamin C), total soluble sugar, total phenolic substance content and antiradical activity content properties of different sizes of micro sprouts (2, 4 and 6 cm) were investigated. In the study, it was determined that the relative humidity, crude protein, ascorbic acid, total soluble sugar and total phenolic substance content increased in the studied species depending on the micro sprouts size. Antiradical activity with increased micro sprouts size, increased in beans, peas, mung bean and buckwheat, and decreased in soybean and quinoa species. As a result of the study, the size of the micro sprouts that should be consumed according to the plant species also changes. It can be said that 6 cm in bean, mung bean and buckwheat species, 4 cm in soybean, and in quinoa and peas in all sizes, the highest benefit will be obtained in terms of examined properties.
