Study on fatty acids and phospholipids composition of the flower of Juglans regia from Xinjiang Hetian and biological activity screening

Abstract
The phospholipids and fatty acids were extracted from the flower of Juglans regia. The chemical compositions were identified by gas chromatography/ mass spectrometry (GC/MS). The scavenging effects of phospholipids and fatty acids on DPPH free radicals, hydroxyl free radicals (•OH) and ABTS were investigated. The antibacterial activities of phospholipids and fatty acids in the flower of Juglans regia were determined by using Escherichia coli, Candida albicans, Bacillus subtilis and Staphylococcus aureus as test bacteria. The results showed that the phospholipids and fatty acids in the flower of Juglans regia had scavenging effects on DPPH, •OH and ABTS. The phospholipids and fatty acids had antibacterial activities against pathogenic Escherichia coli, Candida albicans, Bacillus subtilis and Staphylococcus aureus.
