NUTRITIONAL ANALYSIS OF THREE VARIETIES OF MAIZE (ZEA MAYS) PRODUCTS FROM TWO DISTRICTS OF GILGIT-BALTISTN

Abstract
Maize (Zea mays) is a cereal, belonging to the family Poaceae it is a multipurpose crop, providing food and fuel for human beings, feed for animals, poultry and livestock. Phyto-chemical analysis i.e. antioxidant, total phenolic contents and total carotenoid contents were found maximum in Pahari Maize variety flour and its chapatti having values (68.56%, 18.36 and 108 mg/ml, 57%, 10% and 75% respectively. Whereas, minimum values of antioxidant were observed in Popcorn Chapatti having values of 40.96%. Azam chapatti contain minimum carotenoids and total phenolic contents among three varieties having value 6.56 and 65.87 mg/ml. Mineral contents such as Iron content was observed maximum in Popcorn Maize Flour and its Chapatti having 19.25 and 16.32 mg/100g. Azam variety has minimum zinc content having 15.52 mg/100 whereas Iron content was found maximum in Pahari and Pop corn flour and in Chapatti having same values 1.10 mg/100g and 1.05 mg/100g respectively. The present study concludes that all three varieties of Maize are excellent source of minerals, vitamins, antioxidants, phenolic content and total carotenoids whereas Phari is richer than Popcorn and Azam. Besides, all varieties are found in consonances with worldwide varieties and are equally beneficial for human consumption.
