¬¬Utilization of Dried Mulberry As Sugar Replacer In Various

Abstract
Mulberry is an important and nutritious fruit grown round the world for many food and commercial purposes. Mulberry is a rich source of sugars, minerals, vitamins, fiber and antioxidants, which is consumed as fresh and many other value added products including bakery products. Mulberry is mostly cultivated in china, Pakistan, India and Middle Eastern countries. The current investigation was conducted to analyze certain characteristics of dried mulberry and bakery products developed by replacing sugars at different concentrations of dried mulberry molasses from Gilgit-Baltistan Pakistan. The prepared products were analyzed for rheological, chemical, mineral and sensory properties. Treatments T0, T1, T2, T3 and T4 were prepared with replacement of sugar with 0, 25, 50, 75 and 100% mulberry molasses. During the research analysis it was concluded from the assessment exertion that replacement of sugar with mulberry molasses improves the physical, chemical and nutritional value of the product. Among the treatments observed T3, 75% sugar replaced by mulberry molasses was liked most in all attributes by all the judges
